So simple, yet so versatile! This Courgette and Pepper Recipe proves once again that it doesn’t take much to bring a Mediterranean dish into your kitchen. It’s easy to cook and very tasty!

The simple casserole right out of the oven is a delight. And definitely beginner friendly in preparation.

Ingredients for Courgette and Pepper Recipe

5 pieces of tomatoes
2 tablespoons tomato paste
1 piece of bell pepper
1 piece of onion
2 cloves garlic
1 piece of Courgette (green)
1 piece Courgette (yellow)
1 piece of eggplant
1 tablespoon apple sweetener
2 tablespoons white balsamic vinegar
10 tablespoons olive oil
1 bunch of thyme
0.5 bunches rosemary
1 bunch oregano
1 bunch marjoram
1 pinch of salt
1 pinch pepper

Instructions

To make the perfect ratatouille yourself, you need a few more ingredients than for a classic ratatouille. First we make the sauce. For this, we cut the peppers into coarse pieces and fry this hot in half of the olive oil.

In the meantime, we chop the onion coarsely and add it to the pan. As soon as the bell pepper has a roasted flavor, we add the tomato paste, the coarsely chopped garlic and two of the chopped tomatoes.

Let this simmer for about 5-10 minutes on medium heat before blending with a hand blender to a coarse sauce.

Now we wash the remaining tomatoes, as well as the zucchini, as well as the eggplant and cut everything into slices.

The next step is to spread the sauce on the bottom of the baking dish and layer the vegetables on top, alternating in “colorful rows”.

This is still lightly salted and peppered and now comes for about 60 minutes at 100 degrees Celsius in the oven.
