Ingredients

2 kg ripe plums
750 g white onions, chopped
400 g ginger, peeled and chopped
2 bulbs garlic, the cloves chopped
250 ml light soy sauce
1 rice vinegar
1 kg light muscovado sugar
6 star anise

Instructions

Remove the stones from the plums, cut them into rough pieces and put them in a very large pot. Add the chopped onions, chopped ginger and chopped garlic. Now add the soy sauce and rice vinegar and bring everything to the boil while stirring, then reduce the heat to the lowest setting, put the lid on the pot and let everything simmer for 20 minutes.

In the meantime, toast the star anise in a small pan without fat until it starts to smell very fragrant and then grind the star anise very finely. I always do this in an old coffee grinder that I have kept especially for this purpose.

After 20 minutes the plums and the other ingredients should be very soft, if not, simmer a few minutes longer until everything is very soft. Now press everything through the liquid whisk or a sieve and collect the liquid. Clean the pot and put the liquid back into the pot.

Now add the muscovado sugar and the ground star anise and simmer everything over a medium heat, stirring occasionally, until the sauce begins to thicken. This will take between 30 and 60 minutes.

Then immediately pour the sauce hot into sterile twist-off jars, seal and turn upside down for 10 minutes.
