1 tablespoon olive oil

30 g pine nuts
100 g feta

Instructions

Wash the courgettes, remove the ends and cut lengthways into fine strips with a peeler or mandolin.

Grate the zest from the lemon and squeeze out the juice. Mix with olive oil, salt and pepper in a bowl. Add the courgette slices, mix everything together and set aside for 10 minutes.

Meanwhile, toast the pine nuts in a non-oil coated frying pan over a medium heat until golden brown.

Arrange the marinated courgette strips on a plate, garnish with pine nuts and sprinkle with feta.
