Ingredients
Servings: 2 Preparation:15 minutes Cooking time: 25 minutes Calories: 320 Fat: 15g
2 courgettes
1 red onion
1 clove garlic
1/2 red pepper
100 gram corn
8 black olives
160 grams grated cheese
rock salt
ground pepper
a pinch of ground cumin
1/2 tsp marjoram
some parsley to garnish
Instructions
Cut the courgettes in half lengthways and carefully scoop out with a spoon.
Dice the onion, garlic and red pepper and mix with the sweetcorn, chopped olives and cheese. Season with rock salt, pepper, cumin and marjoram.
Fill the mixture into the courgettes and place them on a baking tray lined with baking paper or in an oven dish.
Cook the courgettes at 180° Celsius, top and bottom heat, for 25 minutes.
Arrange, garnish with fresh parsley, serve and enjoy.
Tip:
Instead of courgettes, you can also use aubergines for this dish. You can stuff the aubergines just like the courgettes. If you want it a little more intense, you can sprinkle the dish with some goat cheese.
