Ingredients

1 kg plums
500 g jam sugar
1 pc. Lemon
20 g ginger, fresh
40 ml gin

Instructions

Wash, halve, stone and dice the plums. Mix 1 kg fruit with preserving sugar in a saucepan and leave to infuse for approx. 3 hours.

Halve the lemon and squeeze out the juice. Peel and finely chop the ginger. Add lemon juice and ginger to the plums and bring to the boil, stirring occasionally. Simmer gently for approx. 4 min. stirring constantly.

For the jelly test, put 1 tsp of jam on a cold plate. If the jam sets after approx. 1 min. it can be processed further. If necessary, extend the cooking time by approx. 1-2 min. and repeat the jam test.

Carefully lift off any foam with a spoon. Add the gin, stir and fill the hot plum-ginger jam with gin into clean screw jars. Close the glasses and leave to cool on the lid.
