We made this recipe for a dear friend. She has requested the ginger lemon syrup from us. Of course, we did not let her tell us twice and immediately got to work! The syrup consists of only 3 ingredients and is quick and easy to make. Depending on how much ginger you use, the syrup tastes only slightly spicy or more intense. With the specified amount you can taste the ginger out well, but it is also not too intense. But that is of course a matter of taste! The syrup is by far not as sweet as normal syrup. He has only a slightly subtle sweet note by the honey.

300 g ginger (fresh)
500 g honey (light)
5 lemons (juice of the lemons)
1 L water

Instructions

Sterilize the bottles by heating them in the oven at 150 degrees for 10 minutes or by boiling them briefly in a large pot.

Wash the ginger and cut into coarse pieces. Juice the lemon.

The ginger can be peeled beforehand, but it does not have to be, because we put the syrup through a fine sieve before bottling.

Mix the ginger to a pulp and simmer gently with 1 liter of water for about 20 minutes. Alternatively, the ginger can just be finely sliced instead of blended. Cool the ginger water to about 40 degrees and add the fresh lemon juice and honey and mix well.

Pour the syrup through a very fine sieve into the still hot bottles, seal and store in the refrigerator. If you like, attach a label to the bottle.
