What part of the egg does mayo use?

Mayonnaise is made with eggs, specifically the yolks. The yolks are the yellow, oval-shaped part of the egg that is located in the center of the egg. They are a rich source of protein, fat, and other nutrients. To make mayonnaise, the yolks are mixed with oil, vinegar or lemon juice, and seasonings to create a thick, creamy sauce. The oil is added slowly to the yolks while they are being whisked or blended, which helps to emulsify the mixture and create a stable sauce. The resulting mayonnaise can be used as a condiment, a spread, or a base for other sauces and dressings.

Is mayo just raw eggs?

Mayonnaise is made with raw eggs, but the eggs are not the only ingredient in mayonnaise. Mayonnaise is typically made with a combination of eggs, oil, vinegar or lemon juice, and seasonings. The eggs used in mayonnaise are usually raw, but they are combined with other ingredients that help to prevent the risk of foodborne illness. The acid in the vinegar or lemon juice helps to inhibit the growth of bacteria, and the oil helps to create a barrier between the eggs and any potential contaminants. Additionally, the eggs are usually whisked or blended with the other ingredients until the mixture is thick and creamy, which helps to kill any bacteria that may be present. While there is a small risk of foodborne illness associated with consuming raw eggs, the risk can be minimized by using fresh, clean eggs and storing the mayonnaise properly.

Servings: 6 Preparation: 10 minutes Cooking time: 2 Hours Calories: 65 Fat: 4g

Ingredients

  • 6 hard-boiled eggs (carefully peeled and halved)
  • 4 tablespoons mayonnaise
  • 1 teaspoon canola oil
  • 1/2 teaspoon white wine vinegar
  • 1/2 teaspoon mustard or more to taste
  • 1/4 teaspoon Worcestershire sauce (optional)
  • 1/8 teaspoon salt
  • ground pepper
  • paprika powder and chives

Instructions

  1. Carefully separate the egg yolks from the egg white halves and place in a bowl (the egg whites should remain intact!). Set the egg whites aside on a plate.
  2. Mash the egg yolks with a fork, then add the remaining ingredients (except garnish) and mix well. If necessary, add a little more mayo to make the filling creamy.
  3. Pour the egg yolk mixture into a piping bag fitted with a rosette tip and fill the egg white halves evenly with it.
  4. Garnish with paprika powder and chives and serve.

Cooking tips:

I boil the eggs for about 10-12 minutes when I want to make deviled eggs.

The eggs are richest with mayonnaise, but they are also delicious with sour cream, cream cheese or Greek yoghurt!

If you don’t have a piping bag, you can pipe the filling into the eggs using two small spoons. Not quite as pretty, but just as delicious!
