  3. When the popping sounds subside, quickly remove the pot from the heat. Otherwise, the popcorn can quickly burn or become hard. Spread the finished popcorn on a baking sheet so you can easily remove the unpopped corn kernels.
  4. Add butter, sugar and honey to the pot and let it melt together. Your caramel will be especially delicious if you add 2 pinches of salt or replace the butter with salted butter. Keep the mixture moving with a wooden spoon until you get a thick mixture. Make sure it stays a light yellow color as it caramelizes. If it gets too dark the caramel will taste bitter.
  5. Take the pot off the heat and add the finished popcorn. Stir with two long wooden spoons until the popcorn is evenly coated with the liquid caramel. Then spread on a baking sheet lined with parchment paper and let cool. Before serving, break apart your homemade caramel popcorn.
