What seeds can be added to bread?
There are many types of seeds that can be added to bread to add flavor, texture, and nutrition. Some common seeds that are often added to bread include:
- Sesame seeds: These seeds have a nutty, slightly sweet flavor and can be added to the top of bread loaves before baking, or mixed into the dough.
- Sunflower seeds: These seeds have a slightly sweet, nutty flavor and can be added to the top of bread loaves before baking, or mixed into the dough.
- Pumpkin seeds: These seeds have a slightly sweet, nutty flavor and can be added to the top of bread loaves before baking, or mixed into the dough.
- Flax seeds: These seeds have a nutty flavor and are a good source of omega-3 fatty acids. They can be ground into a meal and added to the dough, or mixed whole into the dough.
- Chia seeds: These seeds have a slightly nutty flavor and are a good source of omega-3 fatty acids and fiber. They can be mixed into the dough, or soaked in water and added to the dough.
- Poppy seeds: These seeds have a slightly sweet, nutty flavor and are often used as a topping for breads and rolls.
- Nigella seeds: These seeds have a slightly spicy, onion-like flavor and are often used in Indian and Middle Eastern cooking. They can be added to the top of bread loaves before baking, or mixed into the dough.
- Anise seeds: These seeds have a sweet, licorice-like flavor and are often used in sweet breads and rolls. They can be mixed into the dough, or used as a topping for breads.
How do you incorporate seeds into bread?
There are a few different ways to incorporate seeds into bread. One way is to mix the seeds into the dough before shaping and baking the bread. To do this, you can simply add the seeds to the dry ingredients before mixing in the wet ingredients. You can also add the seeds to the dough after the wet and dry ingredients have been combined, by mixing them in by hand or using the dough hook of a stand mixer.
Another way to incorporate seeds into bread is to sprinkle them over the top of the dough before baking. This works well for seeds that have a crunchy texture, such as sesame seeds, sunflower seeds, or pumpkin seeds. You can also mix the seeds with a little bit of water or oil to create a paste, and then spread the paste over the top of the dough before baking. This can help the seeds adhere to the dough and give the bread a more even distribution of seeds.
You can also mix ground seeds into the dough. To do this, you can grind the seeds in a spice grinder or blender, and then mix the ground seeds into the dry ingredients before adding the wet ingredients. This works well for seeds such as flax seeds or chia seeds, which have a softer texture and are easier to grind. Just be sure to use a fine grind, as coarser grinds can give the bread a gritty texture.
